Summer Parties: How To Protect Yourself From Food Poisoning

Tuesday, May 7th, 2013

Ginger-Lime Kale with Squash & Chickpeas

As we go into summer party season, it is more important than ever to learn how to protect yourself and party guests from food poisoning.

In the United States 1 in 6 people suffer from food poisoning every year. The most common food poison is E. coli because the food supply of Americans is from global and local food sources.

The benefit of having global and local food sources is the availability of fresh produce year round of fruits and vegetables.

Food poisoning can result in major illness and even death from eating perishable produce.

Although scientists have not discovered the precise source of food borne illness, symptoms can last 2 to 10 days on average.

Food poisoning can happen from food contamination or simply from someone handling food not washing his or hands properly prior to serving or packing food.

One of the best ways to protect one from food poisoning is to eat fresh produce as much as possible.

Most food poisoning cases come from meat such as poultry that carries salmonella or campylobacter.

When you are cooking meat, always use a food thermometer. This will help you kill harmful bacteria while keeping your meat juicy and tender.

Meat should always be well cooked or t least 160 F to remove E. coli from food.

Here are some other healthy habits of food preparation you should follow to avoid food poisoning:

  • Wash fruits and vegetables with soap if they are raw fruits and vegetables. This cleaning ritual is especially important for leafy greens because they have crevasses where E. coli can hide.
  • Never cut meat on the same cutting board you chop vegetables or fruits.
  • Always keep ready-to-eat food products separate from raw products.
  • Leftovers should be immediately refrigerated.
  • Clean all cooking utensils with soap and hot water before and after handling utensils.

How To Speed Up Your Metabolism With Healthy Eating

Monday, April 29th, 2013

Are you searching for ways to speed up your metabolism? If yes, you can rev up your metabolism with a healthy eating diet. In fact, you can train your body to have a superfast metabolism.

Everyday your body starts and ends a variety of biochemical processes.

The metabolism process is when the body coverts your food fuel into energy/ glucose. This is necessary because all cells in the body need energy – the heart, the lungs, the digestive system, and even the brain need glucose.

The more labor your body has to complete, the faster your metabolism becomes. In other words, how many calories your body needs to fully function correlates with your metabolic rate.

Your metabolic rate is always fluctuating based on how fast the heart beats and the muscles you use or do not use regularly.

If you believe you can speed up your metabolic rate by starving yourself, think again. Anytime you eat less, your body will train itself to burn calories slower. This will make losing weight harder and you’ll feel less energized.

Instead, you should train your body to reduce calories with a healthy diet and weight training activities. Exercise will be essential in building up a good metabolic rate. You can take a walk, go running or ride a bike at least once a day to help boost your metabolism.

Forget the diet pills. Here is what you can eat and drink on the regular to help improve your metabolism:

  • Eat a balanced breakfast every morning to boost your energy and control your appetite for the day. Have plenty of complex carbs and protein in your breakfast such as granola/ trail mix, blueberry snack bars, crackers with hummus, and more.
  • Eat spicy foods. This could be anything with hot peppers like jalapeno and cayenne peppers. Spicy foods boost up your metabolism because the spicy food help the body release adrenaline that increases the amount of calories you can burn.
  • Drink at least 2 cups of coffee a day can increase your metabolism by 15%,
  • Drink plenty of green tea, at least 24oz a day to burn 70-100 calories a day from the antioxidants catechins.
  • You should always eat more than 1200 calories a day by eating small meals every 3-4 hours. Don’t forget to get plenty of sleep (at least 7 hours).

Read up on Hearn Kirkwood’s recipes that will help boost up your metabolism – from Strawberry, Melon & Avocado Salad to Coconut-Crusted Soft-Shell Crab with Mango Chutney.

How To Make Healthy Salads That Help With Weight Loss

Monday, April 8th, 2013

Are you trying to lose weight before summer comes? You’re not alone. With a good workout schedule and healthy diet, you can do it. Start on your weight loss by eating healthy salads that truly help you lose weight. Hearn Kirkwood is here to give you tips on creating weight loss salads.

Don’t go for restaurant or fast food salads, those salads can expand your waistline because they are full of high calorie ingredients and often come in jumbo size.

To create healthier salads that truly help you lose more weight, use oil-based salad dressing. Oil-based salad dressing includes vitamins A, D, E, and K. These are fat soluble and excellent nutrients. In other words, oil-based salad can help reduce fat around the belly.

Toss your oil-based salad dressing with vinegar to train your body to release fat. Your body will also prevent your blood sugar from peaking after meals.

Next, buy fresh, mixed greens such as romaine, radicchio, iceberg and spinach.  Toss in the herbs of basil and parsley as well to improve the flavor of your salad while providing your salad plenty of antioxidants.

If you are a fan of cheese, always use low-fat cheese in your home made salads. The low fat cheese will help you burn fat and reduce hunger pangs because cheese is a rich source of calcium.

Some delicious low-cheeses you can try today are Parmesan, creamy mozzarella and shredded cheddar.

Just because you’re eating a salad does not mean you cannot include meat. Grilled chicken or salmon with tofu or nuts will make you feel satisfied and help you release fat. We recommend only using a few ounces of meat in your salad servings.

It is perfectly healthy to use fruits and vegetables in your salad. Here are just a few delicious ones to try:

  • Carrots
  • Cucumbers
  • Colored peppers
  • Broccoli
  • Peas
  • Artichokes
  • Strawberries
  • Raspberries
  • Pears

You should have at least five fruits and vegetables everyday to help you lose weight faster.

Here are great salad making formula:

  • Have at least 1 cup of mixed greens.
  • Have ½ to 1 cup of fresh fruit for your salad.
  • Have 1 ounce of meat or fish. If you are a vegetarian, use ¼ cups of beans.
  • Serve your dressing in a side dish so you can dip your salad in the dish. This is beneficial because you will increase the flavor of your salad while consuming ¼ or more of the calories.

Healthy Salad Of The day:

To start losing weight today, try a chicken salad with mango vinaigrette. You only need the following ingredients:

  • Mixed greens
  • Mangoes
  • Cantaloupe
  • Raspberries
  • Apple
  • Chicken Breast
  • Green onions

Place all ingredients in a bag and shake it up with mango vinaigrette. You are good to go.

A food basket can be created into a very romantic Valentine’s Day gift. Why? Selecting the right food for your significant other takes a great deal of thought, love, and planning.

This article will provide you information how to create a wonderful Valentine’s Day Food Basket at an affordable cost.

Making the food basket is one of the easiest Valentine’s Day gifts you can compose.

To get started, you should write a list of all the potential food items you want to include in the basket and shop accordingly for a basket that can fit all potential food items.

The color of the basket should be a solid, traditional color such as brown, gray or black.

Next, go shopping for any utensils that will be needed to consume food such as glasses and dessert dishes. We also recommend you putting a small bouquet of flowers in the basket. Don’t forget to add in some gourmet chocolates to cater to your significant other’s sweet tooth.

Another food basket must have is your significant other’s favorite drinks of tea, coffee or alcohol beverages. Add personalized messages to each item to let your special someone know why you chose each food item within the gift basket.

But more importantly, you should keep healthy eating habits in mind when creating the food basket.

Since Valentine’s Day is a month for appreciating loved ones, you should incorporate food good for the heart.

When you show your loved one that a healthy heart should be a top priority, you demonstrate how much you truly appreciate and care for the person. Why? Heart disease is the number one cause of death in the U.S.A.

Tuesday, January 22nd, 2013

Superbowl Broiled Buffalo Wings

Harbowl! Superbowl! No matter what you call it, the Baltimore Ravens are going to the Superbowl! It is time to prepare a menu for your Superbowl party! One must have appetizer is Buffalo wings! You can incorporate plenty of healthy choices within your menu, including Buffalo wings!

Yes, Buffalo wings can be transformed into a healthy choice by serving broiled Buffalo wings!

Buffalo wing eaters will absolutely love broiled Buffalo wings because the crispy, delicious flavor of standard Buffalo wings is not sacrificed. The difference between normal Buffalo wings and broiled Buffalo wings is that broiled Buffalo wings do not include all the saturated fat and calories.

When chicken is broiled rather than fried, you only need a touch of oil and broth to make the sauce flavorful and you will not have to use any butter. Your buffalo wing eaters won’t miss the butter because the hot sauce and blue cheese dip will make these wings absolutely incredible appetizers.

What ingredients will you need to broil your Buffalo wings?

You will need fresh lemon juice (1 tablespoon), chicken broth, celery, blue cheese, chicken and cayenne pepper sauce (1/4 cup).

You can serve at least 4 people with 2 pounds of chicken wings. You will only need 3 tablespoons of low-sodium chicken broth.

Next, preheat your broiler and place the wings inside a pot filled with water. The wings only need to boil for about 11 minutes. Once the wings are fully broiled, drain them.

Mix cayenne pepper sauce, lemon juice and broth together to make your Buffalo wing sauce.

Place all the wings on a broiler pan and broil them for 5 to 6 minutes. Flip them on the other side for 5 more minutes.

Once the wings are cooked through, place them on a baking sheet and coat each wing with sauce. After coating the wings, put the baking sheet under the broiler for 1 minute. They are completely ready to serve.

Don’t forget to enjoy this delectable appetizer with a cold beer. No greasy wings, no high sodium and no excessive calories! What more could you ask for in a buffalo wing?

More money, fewer calories and plenty to Enjoy!

Great Winter Meals: Chicken Sotanghon

Wednesday, January 2nd, 2013

Are you searching for warm and delicious meals to serve the family? If yes, Chicken Sotanghon may make a great dinner meal that could last for days.

What is Chicken Sotanghon?

Chicken Sotanghon is a Filipino dish that features bean thread noodles, bihon thin rice noodles, chicken, onions, garlic, chicken broth, salt and dried shiitake mushrooms.

Here are the ingredients you will need:

-      2 cups of water

-      1 teaspoon of salt

-      1 pound of your favorite chicken parts (highly recommend chicken wings or chicken drums)

-      Bean thread noodles for your serving amount

-      3 tablespoons of olive oil

-      2 garlic garlic cloves or minced garlic

-      1 tablespoon of fish sauce

-      2 green onions

The first thing you will need to do is bring your water to boil and add the salt to the boiling pot. The chicken should be boiled in this water until the pink in the center disappears and the juices are clear. This roughly takes about 10 minutes. The center of your chicken should at least be 165 degrees.

Once the chicken is boiled, you should remove the meat from the bones. We like to include the chicken skin in our Sotanghon meal but you do not have to include the skin.

Allow the chicken to cool and soak your mushrooms in warm water for at least 30 minutes. You should place your noodles in this warm water as well.

Cook your onions and garlic in a hot skillet with olive oil for at least 5 minutes. To give your Sotanghon the red and orange color, add the achiote powder.

Lastly, mix the chicken, noodles, broth and skillet onions and garlic into one pot. Heat on low simmer for at least 10 minutes.

Christmas Cookie Baking Tips And Cookie Recipes

Wednesday, December 12th, 2012

Christmas just isn’t Christmas without Christmas cookies. Enjoy making healthy, holiday sweets with your kids this Christmas. Hearn Kirkwood has some great baking tips to share to make this years batch of Christmas cookies your all time favorite.

Here are some Christmas cookies you can bake this Christmas:

  1. Rudolph The Red Nosed Reindeer Cookies. These adorable cookies can be made with Pillsbury’s Simply Peanut Butter cookie dough. The cookies only need to bake for 8 to 10 minutes. Once they are fresh out the oven, push mini chocolate pretzels at the tops to add antlers. The eyes and nose can be made with M&M Minis. It should make a batch of 24 cookies.
  2. Snowflake Cookies. This is a great way to let it snow indoors. These are chocolate chip cookies with snowflake sprinkles and morsel toppers.
  3. Snowman Pops. These holiday treats can be used as holiday presents. Simply put your favorite batch of cook mix into your popper machine and decorate your bake pops into your favorite kinds of snow people such as frosty the snowman.

No matter what cookies you decide to make for the holidays, make sure you follow these simple tips to make sure your cookie baking is a success:

  1. Carefully read your cookie recipe. This may sound like common sense but many people take only a quick glance over the ingredients and start on the recipe right away. It is important to read the cookie recipe in full before starting on the recipe because some preparation may include ingredients sitting for hours or dough make have to sit overnight.
  2. Never grease cookie sheets. Why? Grease is hard to clean up. Instead, purchase parchment paper and avoid non-stick sprays because non-stick spray can destroy pans overtime.
  3. Never use flour to roll out your cookies. If you plan on using light colored dough, roll out your cookies using powdered sugar. If you are cooking chocolate cookies, roll them out with cocoa powder. If you don’t want to use a powder, use waxed paper.
  4. Refrigerate cookies. Why? Certain types of cookie dough are easier to form and bake when refrigerated. The cold temperature of your fridge will firm up your dough and make slicing rolls as easy as pie. Refrigerating also works wonders on shaping cookies. If you freeze cookies, make sure they are wrapped tightly to prevent freezer burn. They will have to thaw at room temperature prior to serving.

Healthy Eating: How To Slim Down Thanksgiving Recipes

Tuesday, November 20th, 2012

Are you searching for ways to enjoy your Thanksgiving feast without gaining excessive weight? If yes, you’re not alone and there is way to thin you’re your Thanksgiving feast without removing the deliciousness from your meal.

Remember, Thanksgiving only happens once a year but gaining weight during the holiday season can make you gain a pound or more throughout the year.

To keep off the weight, be active during and after Thanksgiving dinner. Exercising more than you eat can easily help you burn off extra calories. You can exercise by walking, running or participating in a fitness routine ahead of Thanksgiving. It will be easier to do this when you make fitness a family activity.

Have the family take a walk with you early Thanksgiving Day and one right after dinner. You will not only keep the weight off but you will be enjoying quality time with your family.

Another great idea you can try for Thanksgiving is to eat a small breakfast the morning of Thanksgiving so you will control your appetite better. A good breakfast for Thanksgiving can be an egg with whole-wheat toast. You may want to eat a bowl of whole-grain cereal with low-fat milk.

The more protein and fiber you have in your Thanksgiving breakfast, the more you’ll be able to take the edge off your appetite during the big feast.

Next, reduce the fat, sugar and calories in your traditional Thanksgiving recipes. Your recipes will not taste bad by reducing some sugar and fat because most recipes have more sugar and fat than is necessary.

You can cut down fat and sugar in the following ways:

1.   Use fat-free chicken broth to baste your turkey and make gravy for your meals.

2.   Use fruit purees as sugar substitutes and reduce the oil and butter in your bake goods.

3.   Use plain yogurt and fat-free sour cream to make creamy dips, mashed potatoes and Thanksgiving casseroles.

After making your Thanksgiving meal, advise yourself and your guests to fill their plates with small portions of their holiday favorites rather than omitting favorite foods from the plate. When you’re done eating, don’t go up for seconds. Instead, make a plate of leftovers to eat the next day. Save room in your belly for dessert after dinner. You always eat more of your favorites the next day.

Remember, as long as you keep your portions small, you can enjoy anything that’s being served. White Turkey meat, vegetables, roasted sweet potatoes, mashed potatoes and pumpkin pies are all safe bets.

Follow these steps and get the freshest food for Thanksgiving from Hearn Kirkwood.
