Having a few festive summer parties? A perfect dessert you should have on the menu is summer cupcakes! Cupcakes are timeless treats that you can truly get creative in design and flavor.

 

The following are a few irresistible cupcake recipes:

 

The Shark and Beach Cupcakes

 

If you are having a party on the beach, shark and beach cupcakes are adorable treats to give to the kids and so much easier to serve than cake. The cupcakes can be chocolate or vanilla flavored with Swiss Meringue Buttercream.

 

You can bake these cupcakes a week ahead and freeze them until your party! Be sure you only decorate them with frosting a day at the most before serving. If you need to travel with your cupcakes, use a shallow plastic container and put waxed paper between them.

 

 

The Nectarine Cupcakes

 

For cupcakes with a healthy twist, add fresh fruit like nectarines to your cupcake mixture and toppings. Nectarines are sweet, juicy fruit that go wonderfully with a whip cream topping. If you’re not a nectarine fan, you can substitute this fruit with peaches, plums, or apricots.

 

You will need the following ingredients:

-      1 ¼ cups of all purpose flour

-      ½ teaspoon of baking powder salt

-      1/3 cup of whole milk

-      1 teaspoon pure vanilla extract

-      6 tablespoons of unsalted butter at room temperature

-      ¾ cup sugar

-      2 large eggs

-      1 cup of cold heavy cream

-      ½ cup of sour cream

-      3 tablespoons sugar

-      2 medium nectarines, peeled, halved, pitted, finely chopped ( 1 ¼ cups)

-      1 medium nectarine, halved, pitted, and thinly sliced for garnish
