Hearty Soups (And Vegan Alternatives) To Try This Winter
Now that it’s December and winter is only a few weeks away, it’s the perfect time of year to try out some new soup recipes. Soup is the ideal meal on any cold day, and always provides a pleasant feeling of warmth and satisfaction. While many people opt for a chicken noodle or meat-filled soup when they want a hearty meal, many soups can also be made vegan with very few substitutions to the recipe.
Spicy Chicken Enchilada Soup
The best kinds of soups are ones that can be left to cook for hours in a slow cooker. While a jarred or canned enchilada sauce can be used for this soup, it’s very simple to make the sauce yourself. You most likely already have all of the ingredients in your kitchen: 2 TBS olive oil, 2 TBS flour, 6 oz tomato paste, 4 TBS chili powder, 1 TBS dry parsley, 1/2 tsp garlic powder, 1/2 tsp dry oregano, 1/2 tsp salt, 1/4 tsp ground cumin, and 2 cups of vegetable stock. Start by heating the olive oil and whisking in the flour. When thickened, add the vegetable stock in slowly, and let the sauce thicken each time before adding more. Then add the spices and tomato paste, whisk again, and continue cooking until it has a thickness similar to tomato sauce, adding water if it gets too thick.
Next up are the main ingredients, which can either include vegan “chicken” or real chicken, depending on your preference, and serves four people. In addition to the enchilada sauce (recipe above makes 2 cups) and 9-12 oz of chicken, you will need 1 (14 oz) can fire-roasted tomatoes, 2 (15 oz) cans black beans not drained, 10 oz corn, 1 (7 oz) can green chilies, 2 cups vegetable stock, 2 garlic cloves (minced), 1 red (or other) onion diced, 1 bell pepper seeded and chopped, and 1-2 jalapenos (optional) seeded and diced. All you need to do is pour everything together in your slow cooker and cook the soup on high for about 5 hours. Finish off by garnishing your soup with anything you’d like- avocado, sour cream, lime, cheese, or tortilla chips are all great options.
