3 Recipes for a Romantic Valentine’s Day Dinner
Many couples love going out for Valentine’s Day dinner, but staying in can be just as fun (and won’t involve waiting in traffic, waiting for a parking spot, and waiting in line)! Here are three delicious and simple recipes to accompany your entrée of choice during a romantic Valentine’s Day dinner.
Refreshing Cucumber and Baby Heirloom Tomato Salad
This simple salad feels extra luxurious on Valentine’s Day, but is simple enough that you could make it again for a weeknight. Wash and slice one cucumber. Wash and halve one pint of baby heirloom tomatoes. Arrange them nicely on a plate or platter for family-style serving and top with ¼ cup of crumbled blue cheese and 2 tablespoons of pomegranate seeds for a sweet crunch. Top the entire dish with your favorite herby vinaigrette.
Delicious Garlic Roasted Baby Potatoes
These potatoes are the perfect side dish for a romantic Valentine’s Day dinner or any chilly winter night. Preheat your oven to 500 degrees and lightly oil a sheet pan. Toss together 1 lb. of halved baby potatoes, 2 sprigs of rosemary, 2 sprigs of sage, 1 sprig of thyme, and 2 small unpeeled cloves of garlic. Drizzle the mixture with olive oil and liberally season with salt and pepper. Put the potatoes on the baking sheet and reduce the heat to 425 degrees. Roast the sheet pan for 15-18 minutes, until they are crispy on the outside and tender on the inside.
Savory Honey Balsamic Brussels Sprouts
Honey balsamic brussels sprouts sound much harder to make than they are, which makes them ideal for an impressive Valentine’s Day dinner spread. Heat a large sauté pan over medium-high heat. Add 1 tablespoon of honey and 2 tablespoons of balsamic vinegar and cook for 5 minutes. Add in 2 tablespoons of olive oil and 1/3 lb. of brussels sprouts, cleaned and halved. Cook for about five minutes. Plate and garnish with 2 teaspoons of pomegranate seeds and 2 tablespoons of minced shallot.
