Great Healthy Dishes to Celebrate Mom

Mother’s Day is a time to really pamper your loved one and let her know just how much your appreciate her. A popular gift for mom is breakfast in bed or a delicious Sunday brunch with fresh fruits, vegetables, and some protein. Of course, a glass of champagne doesn’t hurt. This holiday make mom feel special by letting her sleep in while you prepare a healthy meal. Here are some recipe ideas for brunch.

Watermelon Salad

Start the meal off with fresh fruit and a tall glass of sparkling water with lemon and mint in it. This combination will cleanse mom’s palate, stimulate digestion, and leave room for more to come. Pairing crisp watermelon with feta cheese is classic. This recipe is adapted from a similar recipe by food blogger Alice Currah. Her recipe calls for the addition of onions and field greens, which you can do.

Ingredients 6 cups cubed watermelon 1 cup crumbled feta cheese 1/4 cup chopped fresh mint 1/4 cup fresh lime juice 1 tbsp extra-virgin olive oil

Directions Combine watermelon, feta cheese, and mint in a large bowl. Pour the lime juice and olive oil over the watermelon mixture and toss to coat.

Frittata with Grilled Asparagus Spring is abundant with young fresh vegetables. Asparagus is at its peak this time of year. It is tender yet still has a snap. A healthy way to prepare asparagus is to lightly grill or oven roast it with just a little extra virgin olive oil, a squeeze of fresh lemon, and a sprinkling of salt. Serve this alongside a simple frittata with some crusty whole grain bread.

Ingredients 6 to 8 fresh eggs Splash of fresh cream or milk 1/4 cup grated parmesan cheese (optional) 1 TBS fresh chives, minced Sea salt & cracked pepper to taste 1 TBS Extra virgin olive oil 1/2 TBS unsalted butter

Directions 1. Preheat the oven to 350˚F. 2. Whisk together the eggs and cream, then mix in the chives and salt and pepper to taste. 3. Add oil and butter to an 8” skillet and heat on the stove on medium until the butter melts. 4. Pour in the egg mixture and heat through for about 10 minutes. Transfer to the hot oven and bake until the top of the eggs are bubbly and a bit puffed up. This can be served warm or at room temperature.
Spiked Coffee Finish the meal off with a steaming cup of coffee spiked with an ounce of amaretto or whiskey, topped with a spoonful of lightly sweetened whipped cream, and some shavings of very dark chocolate. This is a bit decadent, but a healthier way to have dessert that is relatively guilt-free. A little super dark chocolate is not bad for you.
