What to Do With Your Thanksgiving Leftovers

You have perfectly counted out how much turkey you need for Thanksgiving. But there is always that one person that doesn’t show up or doesn’t eat all of their turkey, so now you are left with tons of leftover turkey. But instead of putting it on sandwiches then throwing the rest away when you get tired of it, why not make something new out of that turkey? Let’s take a look at some things you can do with your Thanksgiving leftovers.

Turkey and Corn Enchiladas

Turkey and corn enchiladas can be a great change of pace from the usual leftover game. To make this delicious meal, you’ll need to shred up your leftover turkey. Shred about two cups of your leftover turkey and mix it with a cup of corn, pepper jack cheese, salt, and pepper. Roll the mixed up in flour tortillas and transfer into a baking dish. Top the rolls with enchilada sauce and bake for 20 minutes.

Turkey, Dill and Orzo Soup

If you want something warm for next week, make this delicious turkey, dill, and orzo soup. Use six cups of low-sodium chicken broth, four cups of sliced carrots, a half cup of orzo, one and a half cups of shredded turkey, and two tablespoons of fresh chopped dill. Bring the broth to a boil in a large saucepan then add carrots and orzo to simmer until tender. Stir in turkey and dill then simmer for two minutes.

Turkey Samosas

This Middle Eastern classic is sure to be a hit for your family. Not only will it disguise the turkey, it is also delicious! Use a refrigerated store pie crust, a cup of shredded turkey, a quarter cup of mango chutney, and leftover mashed potatoes. Cut the crust into eight triangles. Mix the shredded turkey with the mango chutney and fill each triangle with the mixture then top with the potatoes. Brush each edge with water and pinch to seal. Bake at 375-degrees until golden brown, about 25 to 35 minutes.
