Calling All Fall Vegetables

Fall is the perfect time for fall festivals or just taking a walk in the park and enjoying the brisk air and beautiful leaves. But before heading home, why don’t you stop by your favorite stand for some beautiful fall vegetables. Let’s take a look at some of our favorite fall vegetables that are about to hit some of your local markets.

Artichokes

While most artichokes are picked in the spring, their second crop is actually ready in the fall. The fall tends to produce small to medium sized artichokes that are perfect for steaming or stuffing.

Arugula

A peppery green, arugula is harvested at different times in different places. But it grows in many different places throughout the cool autumn months. Arugula is often eaten in salads, sandwiches, and wraps for an extra bite.

Beets

While most people assume beets only come pickled or from a can, fresh beets are actually sold with their green tops attached. This vegetable is in season in temperate climates from fall to spring but can be found all year around when imported.

Brussel Sprouts

Brussel sprouts are those long stalks with little green balls attached to it. No one seems to know what to do with these vegetables but they are surprisingly delicious. Brussel sprouts are delicious when roasted in the oven or in stews.

Eggplant

Eggplant comes into season toward the end of the summer but does stay in season well into the fall months. Purple and delicious, eggplant is a versatile plant and perfect when roasted.

Green Beans

Green beans may be found all year around when canned but nothing beats fresh beans. Green beans tend to be sweetest and most tender during their natural season, from mid-summer to fall.

Radishes

Radishes come in many different types and are fast-growing plants. They are often sown many times during the year and harvested in many different climates. Fall marks the end of the season for small red radishes and the beginning of the season for daikon-type radishes that are larger.

Winter Squash

Winter squash of all sorts come into season in the early fall season. This growing season usually lasts well into the winter months.
