Healthy Grill Recipes

Last week we talked about tips for grill safety. From cleaning your grill to using the right utensils, it is important to practice these important grill safety tips. But now that we have talked about them, how about putting them to practice with some healthy grill recipes. Let’s take a look at two of our favorites!

Pesto Shrimp Skewers

These easy pesto shrimp skewers are perfect for a weekend lunch on the go or for a quick weeknight meal. For this recipe, you will need:

  • 8 wood skewers, soaked in water for 20 minutes
  • 1 pound of medium or large frozen shrimp, thawed and cleaned
  • 3 lemons, thinly sliced
  • Extra-virgin olive oil for drizzling
  • Kosher salt
  • Freshly ground black pepper
  • ½ cup of pesto, store bought or your own mix

Preheat your grill to medium-high heat. Take a soaked skewer and carefully alternate the shrimp and lemon slices. Before putting them on the grille, drizzle the skewers with olive oil and season with salt and pepper. Carefully place them on the grill and turn occasionally until the shrimp is opaque and the lemons are slightly charred. It should take four to five minutes to cook. Once they are off the heat, brush each skewer with the pesto and serve with your favorite side dish.

Hawaiian Chicken Kabobs

If you want something on the sweeter side, why not try this Hawaiian chicken kabob recipe? It is sure to set your taste buds Hula dancing. For this recipe, you will need:

  • 8 wood skewers, soaked for 20 minutes in water
  • 3 tablespoons of soy sauce
  • 3 tablespoons of brown sugar
  • 2 tablespoons of sherry
  • 1 tablespoon of sesame oil
  • ¼ teaspoon of ground ginger
  • ¼ teaspoon of garlic powder
  • 8 skinless, boneless chicken breasts cut into 2-inch pieces
  • 1 20oz can of pineapple chunks, drained

In a dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder. Stir in the chicken and pineapple chunks and let it marinate for at least two hours in the refrigerator. Preheat grill to a medium-high heat and lightly brush the grill with oil. Thread the chicken and pineapple onto the skewers and grill for 15 to 20 minutes, turning occasionally, then serve with a side of rice.
