Last Minute Fourth of July Dishes

The three-day Fourth of July weekend is finally here and you just invited to two different cookouts on Monday and they are both potluck. So what do you do? You can pick up some overly sweet dessert from the store or you can spend a few minutes of your weekend making a delicious dish for each party? And better yet, these dishes won’t take more than 10 minutes to complete, leaving your weekend free to relax by the pool. So what are you making? Let’s take a look!

Easy-Peasy Five Minute Hummus

That’s right, this hummus takes a total of five minutes and five ingredients to assemble. What could be simpler than that? For this delicious dish, you will need:

  • 1 15-ounce can of garbanzo beans, rinsed
  • ¼ cup of olive oil
  • 2 tablespoons of lemon juice, or the juice of 1 lemon
  • 1 clove of garlic
  • ½ teaspoon of paprika

Put your ingredients into a food processor or high-speed blender with a pinch of salt and blend until smooth and creamy. Transfer to a bowl and serve your homemade hummus with bread, crackers, or veggies. This is perfect to make a head of time because it lasts 3-5 days in your refrigerator.

Red, White, and Blue Cheesecake Parfaits

Now that you have an appetizer, how about making a slightly healthy dessert for the next party? This dessert will definitely light up your night. For these red, white, and blue cheesecake parfaits, you will need:

  • 1 package of light Philadelphia cream cheese, softened
  • ¼ cup of sugar
  • 1 tablespoon of milk
  • 1 tablespoon of lemon juice
  • ¾ cup Cool Whip Lite topping
  • 8 shortbread cookies, crushed
  • 2 cups of sliced strawberries
  • ½ cup of blueberries

In a medium bowl, add the cream cheese, sugar, milk, and lemon juice and mix until blended. Stir in the Cool Whip to even out the cream cheese mixture. In a small trifle dish, spoon cookie crumbs on the bottom layer and top with the cream cheese mixture. Cover the existing layer with strawberries, remaining cookies, cream cheese, and blueberries. Garnish with sliced strawberries for effect.
