Guilt-Free Desserts for Summer
We all want to keep our beach bodies, but sometimes you’ve just got to have your dessert and eat it too. So instead of punishing yourself for craving something sweet, let’s take a look at some guilt-free desserts you can indulge in this summer.
Grilled Tropical Fruit Parfait
For those times you are craving something sweet but without chocolate (hey, it happens!), this grilled fruit parfait is for you. For this recipe, you will need:
- ½ pineapple
- 1 mango
- Olive oil
- 6 Tablespoons of toasted coconut
- 1 and ¼ cups of low-fat plain Greek yogurt
- 2 Tablespoons of honey
- 1 teaspoon of cinnamon
The first step toward your guilt-free parfait is to preheat your grill on high then brush the pineapple and mango lightly with the olive oil. Once the grill is heated, place the fruit on the grill directly on the grate. Reduce the heat to medium-high and cook until you see grill marks and the fruit is slightly tender. It should take two to three minutes per side. Once it is tender, remove the fruit from the grill and let it cool while you assemble the other ingredients. Place the coconut on a baking sheet and bake at 350 degrees for five to ten minutes until golden. Mix the yogurt and honey together in a bowl. Once mixed, cut the fruit into small chunks and mix in a separate bowl. Serve the fruit salad topped with the yogurt dressing and sprinkle with cinnamon and coconut for garnish.
Chocolate Raspberry Towers with Chocolate Sauce
This decadent, guilt-free dessert is perfect to satisfy your chocolate cravings. These towers are big on chocolate, in flavor, and in height so your eyes think this dessert is more than it really is. For this recipe, you will need:
- 1 cup of dark brown sugar
- ½ cup of unsweetened cocoa powder
- ¾ c reduced-fat sour cream
- 5 Tablespoons of unsalted butter cut into pieces
- 1 teaspoon of vanilla extract
- 4 Tablespoons of raspberry liqueur
- 2 large eggs
- 1 and ¼ cup of all-purpose flour
- 1 teaspoon of baking soda
- 2 to 3 cups of fresh raspberries
- 4 oz. bittersweet chocolate, melted.
- ½ cup of boiling water
Preheat your oven to 350 degrees and coat a 9” by 9” baking pan with cooking spray. In a large mixing bowl, whisk a ½ boiling water and cocoa until smooth. Now add the sugar, sour cream, butter, vanilla extract, and 2 Tablespoons of raspberry liqueur and whisk until smooth. Add in the eggs one at a time until well incorporated. In a small bowl, whisk the flour, baking soda, and a pinch of salt and add to wet ingredients. Pour batter into the baking pan and bake until the cake pulls away from the sides of the pan. It should take about 25 minutes. Let the cake cool in the pan for about 10 minutes and invert it onto a rack. Flip the cake once on the rack to cool all sides. Cut the cake into 12 rectangles and split horizontally. Brush each side of the cake with the left over raspberry liqueur and begin assembling. Place the bottom of the cake sliced side up and top with six to nine raspberries, standing upright. Top with the remaining cake and pour melted chocolate onto the tower and serve.
