Easy And Filling Salads That Actually Taste Delicious

With the new year, many people make resolutions to start eating healthier or stop eating out as much, which often leads to making salads for lunch. The first few days may start off great, but let’s be honest, having a salad every day can get a little boring, and may not leave us feeling full. We’ve compiled a few recipes for salads that are easy to make, taste delicious, and will leave you feeling satisfied with your meal!

Mixed Berry

Fresh berries add a great addition to any salad and can bring a completely new taste to the same boring salad you’re eating each day. Mix in strawberries, blueberries, raspberries- or any fruit you’d like- for a tasty and nutritious meal! Fruit pairs best with arugula and a light dressing, such as olive oil and lemon vinaigrette. The salad is so simple to make and will have you feeling energized for the rest of the day.

Chickpea, Pesto, Mozzarella, and Tomato

The ingredients may make it sound like this mouthwatering salad takes a long time to prepare, but it takes less than 10 minutes. All you need is to drain and rinse the chickpeas, then combine all the ingredients in a bowl. You can use store-bought pesto in a jar, or make your own ahead of time. Finish the salad off with some fresh basil, and you’ll be coming back to make this salad again and again!

Arugula, Eggs, and Asparagus Salad

Eggs are a great source of protein, and adding a soft boiled egg to your salad will bring in a whole new flavor and richness. The real key to this salad, however, is to char the asparagus slightly. The hint of char adds a complexity to the meal, although it is only five ingredients and extremely easy to whip together. Whole-milk Greek yogurt, lemon juice, salt and pepper, and a dash of water whisked together top of the salad with a light and tangy dressing.

Peanut-Sesame Slaw And Soba Noodles

While this technically isn’t a salad, this meal is packed with vegetables and is very healthy and filling. The slaw includes soba noodles, cabbage, Brussel sprouts, carrots, and green onions. The delicious peanut-sesame dressing is filled with peanut butter, honey, and fresh ginger for a unique and tasty twist on your classic dressing. Bring this to work for lunch, and you’ll have all your co-workers jealous.
