When there’s snow on the ground outside, we all crave something warm and filling for dinner. And although we may be stuck inside, we usually don’t want to spend too much time making food. Here are some quick and delicious comfort foods to make for those freezing and snowy winter nights!
Tomato Soup And Grilled Cheese
Is there anything better than a classic meal of grilled cheese and tomato soup on a cold day? While canned soup is convenient, it often doesn’t taste nearly as good as homemade soup. If you’re worried about time, we have a recipe that’ll only take 45 minutes to make! The best part is, it only takes three ingredients to get a great tomato soup- four tablespoons of butter, ½ large onion, and one 28-ounce can of tomatoes (whole peeled or crushed.)
Melt the butter over medium heat in a large saucepan, and add 1 ½ cups of water, onion wedges, the can of tomatoes, and about one teaspoon of salt. Bring to a simmer and cook uncovered for 40 minutes, stirring occasionally. To blend the soup, use an immersion blender or a regular blender, but be sure to fill the blender in batches since the soup will be very hot.
Baked Macaroni And Cheese
Mac and cheese is a classic comfort food, but there’s something even more comforting and hearty about a baked mac and cheese. It takes under an hour to complete and is guaranteed to make everyone in your family happy on a snowy evening. Ingredients include eight ounces of uncooked elbow macaroni, ¼ cup of butter, three cups of milk, 2 ½ tablespoons of all-purpose flour, two cups of shredded sharp cheddar cheese, ½ cup of grated parmesan cheese, two tablespoons of butter, ½ cup of breadcrumbs, and one pinch of paprika.
Cook the pasta as usual and drain, then melt butter (¼ cup) in a saucepan over medium heat. Stir in the flour to make a roux, adding milk slowly and stirring continuously. Next, stir in the cheeses, and cook over low heat until the cheese is melted and the sauce thickens. Pour pasta into a large casserole dish, cover with sauce and stir well. Then, melt butter (two tablespoons) in a skillet and add breadcrumbs until they start to brown. Spread the breadcrumbs over the mac and cheese, and sprinkle with paprika. Bake at 350 degrees for 30 minutes.
