Instead, they may have to stick to bread, vegetables, and pie. If you are a vegetarian or are cooking for a vegetarian this Thanksgiving, check out these delicious meat-free options that everyone will enjoy!

Pumpkin Pot Pie

It’s hard to outshine the classic turkey Thanksgiving, but this pumpkin pot pie is likely to be a crowd favorite! With sugar pumpkin, lots of vegetables, and a golden brown crust, vegetarians and meat-eaters alike will love this dish. The vegetable filling includes one small sugar pumpkin, carrots, celery, onion, kale, garlic, and white kidney beans all mixed into a tasty homemade crust.

Baked Acorn Squash With Walnuts and Cranberries

Squash is a Thanksgiving and vegetarian staple, and with walnuts and cranberries, it’s perfect for the holiday. The dish only requires two other ingredients- butter and your choice of brown sugar, maple syrup, or honey. The crunchy, lightly toasted walnuts and sweet cranberries is a tasty combination and ideal side dish.

Vegetable Stew

Thanksgiving is all about eating hearty food, so a warm vegetable stew will hit the spot. Combine a wide variety of vegetables including onion, carrot, celery, portobello mushrooms, white mushrooms, garlic, tomatoes, potatoes, peas, and parsley for this filling fall soup.

Vegetarian Shepherd’s Pie

While shepherd’s pie is made with ground beef, it can be easily made vegetarian or even vegan. Lentils and veggies take over the base, and are topped with creamy mashed potatoes and cheese. For vegans, simply use non-dairy milk and vegan butter for the mashed potatoes and don’t add cheese (or use vegan cheese.)

Roasted Butternut Squash Risotto

A butternut squash risotto with crispy fried sage is a decadent addition to any Thanksgiving dinner table. Use brown arborio rice for a healthier option, and it can easily be adapted to a vegan recipe by skipping the dairy ingredients or replacing them with vegan butter or olive oil. It does include Parmesan cheese, which can have animal rennet, so be sure to find a cheese that is animal rennet-free.
