Apple Cinnamon Baked Donuts
Everyone loves donuts, but they are definitely not one of the healthiest breakfast choices. However, with just a few ingredients and about 30 minutes, you can make a much healthier version of baked donuts!
You will need:
1 cup whole wheat pastry flour
¾ cup unsweetened almond milk
⅓ cup greek yogurt (plain)
½ cup coconut sugar
3 teaspoons cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon sea salt
2 tablespoons coconut oil (melted)
1 teaspoon vanilla extract
Start by preheating the oven to 350 degrees. Whisk the milk, egg, sugar, vanilla, coconut oil and yogurt in a medium bowl. In a different bowl, combine the dry ingredients of baking powder, flour, salt, baking soda, and cinnamon. Cut the apple into small pieces and toss them with a few sprinkles of cinnamon. Mix the dry ingredients with the wet ingredients, then fold in apples- reserving ⅓ of apples for toppings. Spoon the batter into a greased donut pan and bake for 13-15 minutes, top with remaining apples, and enjoy!

Whole Wheat Banana Spice Muffins
If you have some extra bananas at home, make use of them by baking some delicious muffins! For a special treat, add a brown butter glaze on top and sit back and enjoy a tasty homemade breakfast.
For 12 muffins, you will need:
2 cups whole wheat pastry flour
1 teaspoon baking soda
¼ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon cardamom
1 large egg
⅓ cup packed brown sugar
¼ cup unsalted butter, melted and cooled
⅔ cup milk
1 ½ teaspoons vanilla extract
2 medium ripe bananas, mashed
Preheat your oven to 350 degrees, and whisk together the flour, baking soda, salt, and spices in a bowl. In a separate bowl, whisk egg and brown sugar together until smooth, then add vanilla extract, butter, and milk, whisking until smooth. Next, stir in the mashed bananas, and gradually add dry ingredients until combined. Line a muffin tin with liners, and fill each about ⅔ of the way full, then make for 15-17 minutes.
If you choose to make the brown butter glaze, you will need:
¼ cup unsalted butter
½-¾ cup powdered sugar
½ teaspoon vanilla extract
1 ½ tablespoons milk
Add butter to a small saucepan over medium-low heat, and whisk constantly until melted. Continue to whisk as the butter begins to foam and as brown bits appear on the bottom of the pain- about 5-6 minutes. As soon as you see the brown bits, remove the pan from heat.
Combine butter, vanilla extract, and powdered sugar in a separate bowl, and whisk until the mixture comes together. Add in one tablespoon of milk and continue to stir, and add another ½ tablespoon if it doesn’t look like a glaze. Spoon warm glaze on top of muffins, and enjoy!
