Make A Green Power Salad For St. Patrick's Day

St. Patrick’s day is an Irish holiday that is often celebrated with anything green- so why not use it as an excuse to make a delicious green power salad? We all know how hard it is to keep up with our diet or New Year’s resolution to eat healthier, so anything to make eating healthy fun will help you stay on track!

Add Green Vegetables To Your Salad

If you’ve been sticking to plain salads with just lettuce, spinach, and some light dressing, you’re likely bored with the meal and are craving something else for lunch or dinner. Salads don’t have to be so plain- in fact, the more vegetables you include, the better! Add more flavors and nutrients to your salad by including multiple green ingredients, such as kale, cucumber, avocado, edamame, snap peas, broccoli, celery, green grapes, green onion, pistachios, and alfalfa sprouts.

Green Goddess Dressing

If you want to stick to the all green theme, Green Goddess dressing is the perfect topping to bring your salad together. Make your own dressing with two teaspoons of anchovy paste or two to four canned anchovies, one small minced garlic clove, 3/4 cup of mayonnaise, 3/4 cup of sour cream, 1/2 cup of chopped parsley, 1/4 cup of chopped tarragon, three tablespoons of chopped chives, two tablespoons of lemon juice, and finish with salt and black pepper to taste. Simply put all the ingredients into a blender or food processor for about 30-45 seconds, then serve with your salad or use as a delicious dip!
