Delicious Recipes Using Fresh Spring Vegetables
After a long winter, spring has finally sprung, bringing lots of delicious fresh vegetables! Head to your local grocery store or farmer’s market to pick up some spring vegetables, then try out a few new recipes using the fresh ingredients!
Spinach and Artichoke Dip
Artichokes’ main harvest takes place in the spring, so now it the perfect time to try out your own artichoke dip at home. Artichoke dip is always a popular appetizer, full of delicious cream cheese, spinach, and of course- lots of cheese. Check out this healthier version that is still sure to pack some great flavors:
8 oz reduced fat cream cheese
16 oz plain, non-fat Greek yogurt
2 Tbsp butter
1 1/2 cups parmesan cheese
14 oz quartered artichoke hearts, drained and coarsely chopped
4 oz can diced jalapeños, drained
10 oz frozen spinach (thawed and drained)
2-3 garlic cloves
In a pot over medium heat, start by melting the cream cheese, Greek yogurt, butter and cheese uncovered and stir until it starts to bubble. Stir in the artichoke hearts, jalapenos, spinach, and pressed garlic cloves until the dip is mixed together and bubbling. After just a few minutes, your delicious dip is ready to eat!

Mediterranean Garden Wrap
This recipe is perfect for those who want to get more vegetables and herbs into their diets, as it includes fresh mint, chives, cilantro, carrots, cucumber, red onions, peas, and tomatoes in one delicious wrap! In addition to the healthy ingredient list, this lunch or dinner only takes 30 minutes to make.
1 cup Greek yogurt
1 tablespoon chopped fresh mint
1 tablespoon chopped chives
1 tablespoon chopped cilantro
1/2 teaspoon kosher salt
1 1/2 cups shredded carrots
1 1/2 cups sliced cucumber
1/2 cup sliced red onion
1/2 cup cooked peas
4 sheets lavash (soft Mediterranean flatbread)
2 tomatoes, halved and thinly sliced
In a small bowl, combine the yogurt, herbs, and salt, and in a separate medium bowl, combine the carrots, cucumber, red onion, and cooked peas. Next, lay out your four sheets of lavash and spoon ¼ of the yogurt mixture down the center, then ¼ of the tomatoes on top, and ¼ of the vegetable mixture over the tomatoes until the fillings are gone. Pack them up for lunch or enjoy your fresh vegetable wraps for a nutritious spring dinner!
