Treat Your Mom With These Mother’s Day Brunch Recipes
Mother’s Day is coming up this Sunday, and all moms deserve to be spoiled! In addition to buying your mom flowers or chocolates, it’s also nice to make her something special. Breakfast in bed or brunch with the family is the perfect gift, and we’ve got a few recipes she’ll love!
Croissant and Sausage Strata
Everyone loves a breakfast casserole! This delicious strata only takes 15 minutes to prepare, then 45 minutes in the oven. It’s the perfect dish to prepare the night before, as it can stay in the fridge for up to 12 hours before serving on Sunday morning. For this recipe that serves 12 people, you’ll need eight link sausages (mild or spicy, depending on your preference,) four large butter croissants, eight large eggs, one cup of milk, ground black pepper, and six slices of ½ ounce Havarti cheese.
Cook sausages until brown, then slice into ½ inch pieces and set aside. Spray a 13-by-9-by-2-inch casserole dish with nonstick oil. Slice the croissants into ½ inch pieces and lay along the bottom of the dish, then scatter the sausage on top. In a medium bowl, whisk eggs and milk until the mixture becomes lightly foamy. Pour the egg mixture over the sausage and croissants, pressing the croissants into the mixture to ensure they are fully coated. Sprinkle black pepper on top, then cover with cheese slices. If you are waiting to bake until the morning, cover the dish with plastic wrap or foil and refrigerate. When ready to bake, preheat the oven to 350 degrees, uncover the casserole, and bake for 45 minutes.
This recipe mixes the best of both worlds- delicious Tex-Mex fajitas with breakfast frittatas! This recipe takes 25 minutes and serves six people, and uses the following ingredients: one tablespoon of olive oil, one cup of sliced onion, two cups of bell peppers (any colors) cut into strips, two cups of cooked beef strips, eight eggs, two teaspoons of Taco Seasoning Mix, one cup of shredded cheddar cheese, and one cup of shredded Monterey Jack cheese.
Start by preheating the oven to broil. Heat the olive oil in a frying pan (oven safe) over medium-high heat, adding the onions and most of the peppers- the rest of the pepper strips will be added to the top of the frittata. Cook peppers and onions until lightly browned and tender, then add beef strips and cook until the meat is heated through (about two minutes.)
Next, add eggs to a small bowl and beat, adding the seasoning mix and ¾ of both kinds of cheese and mix well. Pour the eggs and cheese over the meat and peppers on medium-low heat for about five minutes, or until eggs are almost set. Remove the pan from the heat, adding the leftover pepper strips on top of the eggs. Sprinkle the remaining cheeses over the top, and place the pan about four to six inches beneath the broiler. Broil for two to four minutes, and your special Mother’s Day frittata is ready!
