How To Make Quick and Delicious Vegan Desserts
Almost all desserts are made with butter and eggs, so how do vegans get to enjoy delicious chocolate chip cookies or fudgy brownies? Luckily, bakers have found great alternatives for dairy products and eggs to make vegan desserts that taste incredibly similar to the real thing. Chocolate Coconut Crack Bars
Some people believe that vegan meals are all bland and flavorless, but that couldn’t be further from the truth! Take these chocolate coconut crack bars as proof, as they are not only tasty, but they only use four ingredients and take a total of five minutes to make. All you’ll need is three cups of shredded, unsweetened coconut flakes, one cup of melted coconut oil, ¼ cup of monk fruit sweetened maple syrup, and one to two cups of chocolate chips.
Start by mixing all ingredients in a large mixing bowl, then line an 8 by 10-inch pan with parchment paper. Pour the batter in the lined pan, and add some water to your hands to press the batter firmly into place. Put the pan in the freezer or fridge until the batter is firm. While the batter is in the fridge, melt your chocolate chips, then dip each bar to cover in melted chocolate. Put the bars back in the fridge until the chocolate is firm, and you’ve got a tasty vegan dessert!
Chewy Chocolate Brownie Cookies
These yummy brownie-cookies are not only vegan, but they are grain-free and paleo-friendly as well. One of the main ingredients is sweet potato, as they are naturally starchy and sweet, and give the cookie the right texture. There are 11 ingredients for this recipe, but it will only take a quick 20 minutes to make 12 cookies!
You will need one ½ cup of baked and mashed sweet potato, ½ cup of nut/seed butter, ¼ cup of cacao or cocoa powder, two tablespoons of maple syrup, one teaspoon of baking powder, one teaspoon of vanilla extract, two tablespoons of coconut flour, four tablespoons of non-dairy milk, ⅓ cups of chocolate chips, ⅓ cup of walnuts (or any other nuts you prefer), and a pinch of salt.
Preheat the oven to 350 degrees, and combine sweet potato, nut/seed butter, cacao powder, maple syrup, baking powder, vanilla, coconut salt, and salt in a blender or food processor. Then, mix the batter and add one tablespoon of the milk at a time until combined. Next, add in the chocolate chips and walnuts to the batter and mix again. Roll into 12 balls and arrange on a baking sheet lined with parchment paper, bake for 10-12 minutes, and enjoy!
