2 Healthy Shrimp Recipes For Summer
Shrimp is a staple food for summer, and can be used in so many different recipes! Shrimp goes with pasta, vegetables, rice, salads, tacos, and all kinds of flavors. Check out these fun and healthy shrimp recipes to add to your summer meal prep!
Shrimp Poke Bowl
A poke bowl is often made with raw, marinated fish, such as tuna, but you can easily make your own with shrimp instead. With brown rice, cherry tomatoes, avocado, cilantro, and a delicious sauce, this recipe is not only healthy with a boost of fiber but is also the perfect quick summer meal.
First, cook the shrimp and cut into ½ inch pieces. Make the sauce by whisking ¾ cup of thinly sliced scallion greens, ¼ cup of tamari, 1 ½ tablespoons of mirin, 1 ½ tablespoons of toasted (dark) sesame oil, 1 tablespoon of white sesame seeds, two tablespoons of grated fresh ginger, and ½ teaspoon of crushed red pepper in a medium bowl. Once combined, set aside two tablespoons of the sauce in a separate bowl (used later) and add shrimp to the first sauce bowl to marinate.
Next, combine two cups of brown rice and two tablespoons of rice vinegar in a large bowl. Divide the rice into four bowls, with ¾ cup of shrimp, ½ cup of tomatoes, ½ cup of avocado, and one tablespoon of cilantro each. Drizzle the remainder of the sauce on top, and you have a tasty and nutritious meal!
When Taco Tuesday comes around, this recipe is sure to be a crowd pleaser in your household. Start with scooping out one avocado into a mini food processor, then add ½ cup of cilantro, ½ cup of sour cream, one tablespoon of vinegar, and a sprinkle of salt and pepper, then process until smooth. Next, stir two cups of thinly sliced red cabbage, ½ cup of shredded carrots, one scallion (chopped,) one tablespoon of vinegar, and a sprinkle of salt and pepper in a medium bowl.
To cook the shrimp, take a pound (about 21-25 shrimp,) and toss with one teaspoon of chili powder and one teaspoon of ground cumin in a bowl. Next, heat avocado oil in a large skillet over medium-high heat, then add shrimp and cook for about 5 minutes. Warm up a few tortillas, and spread the avocado sauce over each, top each with ¼ cup of the cabbage mixture and about ⅓ of the shrimp. Top off each taco with a fresh lime for squeezing and enjoy your perfect summer tacos!
