2 Recipes With Peaches To Make For Summer


While you can find a lot of your favorite vegetables and fruits at the grocery store year-round, you can only find a good juicy peach in the summer. From salads and drinks to dinners and desserts, peaches can be used in a variety of ways. Now that we’re just a few weeks away from the official start of summer, check out these recipes to have on hand when you can finally stock up on delicious peaches!

Peach Iced Tea

What's more refreshing in the summertime than a fresh peach iced tea? Make this recipe for your next barbeque or pool party, and it’ll be sure to be a crowd pleaser! You only need one cup of organic cane sugar, one cup of water, and two thinly sliced ripe peaches for the simple syrup. For the tea, use three or four tea bags and eight cups of water to serve ten people.

Start by combining sugar, water, and peaches in a saucepan and bring to a boil, then lower the heat and use a wooden spoon to crush the peaches. Once the sugar is dissolved, cover the pan, remove from heat, and let it steep for about 30 minutes. Next, brew your tea and refrigerate to cool. Once the syrup is finished, pour over a mesh strainer to strain out peaches (these peaches can be used on ice cream for a delicious dessert!) Add the syrup to the tea and stir, then serve over ice and fresh sliced peaches for the perfect summer drink.

Grilled Chicken With Spicy Peach Glaze

Peaches can also be used in dinners, especially with chicken. For this recipe of eight servings, you’ll need four ripe peaches, two cups of peach preserves or jam, three tablespoons of olive oil, two tablespoons of soy sauce, one tablespoon of Dijon mustard, one tablespoon of finely chopped garlic, one small finely chopped jalapeno, and eight frenched chicken breasts.

Start by combining the peach preserves, olive oil, soy sauce, mustard, garlic and jalapeno in a medium bowl, season with salt and pepper, and reserve ½ cup. Now it’s time to preheat the grill and brush the chicken with olive oil and season with salt and pepper. Place the chicken skin-side down and cook for about six minutes, then turning over and cooking for another six minutes. Brush both sides with the peach glaze, then cook for another five minutes until done. Cut the ripe peaches in half, place on the grill for two minutes, then turn over and brush with the remaining peach glaze. Grill for another three minutes, and you have yourself a yummy summer dinner!
