Healthy Summer Fruit Pie and Tart Recipes
Summer isn’t complete without a delicious fruit pie or fresh tart for dessert! Baked goods are always tasty, but they aren’t always the healthiest choice. If you’re on the hunt for a healthy dessert that includes fresh summer fruits, check out these recipes below!
Blueberry and Raspberry Hand Pies
One fun summer activity is blueberry and raspberry picking, and the perfect way to use up some of those berries is with mini pies! For the ingredients, you will need one cup of blueberries, one cup of raspberries, two tablespoons of maple syrup, honey, or another sweetener of choice, two tablespoons of orange juice, one tablespoon of cornstarch, one sheet of puff pastry, thawed (or vegan-friendly pastry.) There is the option of an egg wash (one egg and a spoonful of water), but it is not necessary if you are vegan.
Preheat the oven to 400 degrees, and place berries and maple syrup into a medium saucepan and cook over medium-high heat, until berries start to release their juices. In a small bowl, mix together orange juice and cornstarch until smooth, then add to the berry mixture. Continue to cook the berries until sauce has thickened, then remove and let cool.
Place the puff pastry on a sheet of parchment paper and cut the sheet into six squares, then transfer to a large baking sheet. Put a large spoonful of the cooled filling into the lower corner of one puff pastry square, and brush the edges with egg wash (or water). Fold the opposite corner over into a triangle to seal, and use a fork to crimp the edges together. Brush each turnover with more egg wash and bake for 12-15 minutes, and you have a delicious dessert!

Quick Raspberry Tarts
These quick and easy raspberry tarts only take a few minutes to make, but the crust needs to freeze for 30 minutes to an hour. Prepare the tarts before dinner, and simply assemble when the crust is ready to enjoy your dessert. You will only need a few ingredients, including 1½ cup of cashews halves and pieces, one cup of raisins, one teaspoon of vanilla extract, ¼ teaspoon of salt, one cup of vanilla honey greek yogurt (or your favorite vegan yogurt), and about 12 oz of fresh raspberries.
Use a food processor to pulse together cashews, raisins, vanilla, and salt until the cashews have broken down. Grease three round tart pans (4.75 inches) and press the dough evenly into the bottom and sides of each tin, and freeze for 30 minutes to an hour. The crust can be kept in the freezer overnight but may take a little effort to get the tarts out of the tin. When you’re ready to assemble, place about ¼ to ⅓ cup of greek yogurt into each tin. Top with raspberries and honey or powdered sugar, and enjoy!
