4 Ways To Cook Summer Squash
Summer squash isn’t usually at the top of our favorite vegetables list, as they can be bland and sometimes even soggy when not cooked correctly. Rather than avoiding them at your grocery store or farmers market, try a few different cooking techniques to see how tasty squash can really be! A very simple way to cook squash is on the stovetop, in a pan with butter or olive oil. Since they are full of water, this technique can result in softer squash. If you don’t mind that, there is nothing wrong with this method. You can decide to scoop out the squash from the water when ready to serve, or keep cooking until the water has boiled off. Add a small onion, minced garlic, salt and pepper to the pan at the same time as the squash, and you’ve got a quick and yummy side dish!
On The Grill
Have you ever tried to grill squash? This cooking technique adds a smokiness to the vegetable and ensures it will be more crunchy than soggy. An easy summer recipe combines a mix of summer squash or zucchini, combined with a light vinaigrette for the perfect light lunch or side dish at dinner.
Summer squash is also delicious when roasted in the oven, to add some caramelization to the veggies. Cut the squash into bite-sized pieces and place in a large shallow roasting pan, then add olive oil, salt and pepper, and any other seasonings you desire. Remember not to use too much olive oil though, as it can make the squash too soft in the oven. Roast uncovered for about 15 minutes at 425 degrees for another great summer meal!
Steamed In Microwave
When you are very short on time and need a healthy meal quickly, there is always the option of steaming squash in the microwave. Prepare your squash as usual by cutting it into small pieces and season, then place in a microwave safe bowl and microwave for four to six minutes.
