Healthier Version Of Your Favorite Comfort Food: Mac and Cheese
Mac and cheese is the ultimate comfort food- it is warm, filling, cheesy, and all-around delicious. However, boxed mac and cheese can be very unhealthy, and many recipes are high in saturated fat and calories. When you’re in the mood for mac and cheese but want a low-fat, high-protein meal, this healthy recipe is perfect for you!
Low-Calorie Mac and Cheese
For this low-calorie mac and cheese (only 250 calories per serving!) you will need:
12 oz fusilli or elbow pasta
1 ½ tbsp butter
¼ cup minced onion
¼ cup flour
2 cups milk of choice
1 cup vegetable broth
2 cups shredded cheddar
12 oz fresh broccoli florets
2 tbsp parmesan grated topping
¼ cup seasoned breadcrumbs
salt and pepper to taste
This recipe can easily be changed to be vegan-friendly by opting for vegan cheese and nutritional yeast. It can also be modified to be gluten-free by using gluten-free pasta and breadcrumbs.
Start by boiling water in a large pot and cook the pasta and broccoli together following package directions. Spray a baking dish with some cooking spray and set aside, then preheat the oven to 375 degrees. While the oven is preheating, melt butter in a large skillet over low heat, then add onions and cook for two minutes. Add the flour and cook for about one minute, then whisk in milk and broth. Raise the heat to medium-high until the mixture comes to a boil, then cook for five more minutes until it looks smooth and thick. Remove from the heat, season with salt and pepper, then add cheese and stir until melted. Next, stir in the cooked pasta and broccoli and pour mac and cheese into the baking dish. Top with breadcrumbs and parmesan, bake for 15-20 minutes and broil for a few minutes to ensure the breadcrumbs are golden. Lastly, enjoy your healthy and delicious mac and cheese that tastes just as good- if not better- as the traditional kind!
