Shrimp Scampi for Two
Pasta is likely a common meal in your home, but there is something elegant about a delicious shrimp scampi. The recipe is very simple, and you probably already have the ingredients in your home- you just need to buy some shrimp. For two servings, you’ll need:
4-6 ounces dried fettuccine pasta
¼ pound shrimp, peeled and deveined
2 tablespoons butter
1 ½ tablespoon olive oil + more for shrimp
2 ½ – 3 tablespoons shallot, roughly chopped
4 garlic cloves, roughly chopped
Dash red pepper flakes
¼ cup white wine
½ lemon, juiced
¼ teaspoon salt + more to taste
Salt and Pepper
Fresh parsley, for garnish
First, coat the peel and deveined shrimp with salt, pepper, and olive oil. Your partner can start by cooking the fettuccine in a large pot of boiling water, according to package directions. In a large skillet over medium heat, melt 1 ½ tablespoon of butter and 1 ½ tablespoon of olive oil. Then add in the shallot, garlic, and red pepper flakes, and place shrimp in the pan. Once the shrimp is cooked on one side, remove them from the pan and set aside. Add wine slowly to deglaze the pan, then add ¼ teaspoon of salt and the lemon juice. Bring to a simmer, then add the remaining ½ tablespoon of butter. Add shrimp back to the skillet and cook on the other side, then add in cooked pasta and combine. Serve with parsley and a nice glass of white wine or a romantic dinner!

Chocolate Covered Strawberries
Every Valentine’s Day dinner needs a decadent chocolate dessert, and chocolate covered strawberries are the perfect treat to make with your significant other! For your dessert, you’ll need:
1 cup pretzel rods
1 cup almonds
3 (4-ounce) bars of semi-sweet chocolate, melted
Chop up the pretzels and nuts and place in separate bowls, then chop up the bars of chocolate. In a double boiler, melt the chocolate until it becomes smooth and velvety. Then, you and your partner can work together to dip the strawberries in chocolate, then coat in pretzels or nuts. Place the finished strawberries on a ½ sheet tray lined with wax paper, and allow them to set at room temperature- and enjoy!
