Breakfast-In-Bed Recipes To Celebrate Mother’s Day


Mother’s Day is this Sunday, and it is a great reminder to show your mom how much you love and appreciate her. Most moms just want to spend quality time with their kids on Mother’s Day, but why not make the day extra special by serving her a delicious breakfast in bed? Whether you make something simple or a whole spread, your mom will appreciate the time and effort you put into cooking some tasty food.

Classic Coffee Cake

A coffee cake is perfect for breakfast in bed, but can also be enjoyed at any time of day! This recipe takes 30 minutes total, so it can be made quickly for a Sunday morning surprise. Gather your ingredients, including:

  • 1 ½ cups all-purpose flour

  • 1 ½ teaspoons baking powder

  • 6 tablespoons white sugar

  • ½ teaspoon salt

  • ⅓ cup shortening

  • ½ cup milk

  • 1 egg

  • ½ teaspoon vanilla extract

  • 2 tablespoons butter, melted

  • ½ cup brown sugar

  • 2 tablespoons all-purpose flour

  • ½ teaspoon ground cinnamon

Preheat your oven to 425 degrees and grease and flour a 9-inch square pan. Mix together the flour, baking powder, sugar, and salt in a large bowl, then cut in the shortening with a pastry blender. In a separate bowl, beat the egg, then stir in the milk and vanilla. Add this mixture to the flour mixture, and stir until just blended. Pour the batter into your pan and spread evenly, then top with melted butter. For the topping, mix together brown sugar, two tablespoons of flour, and cinnamon, and sprinkle on top of the cake. Bake in the oven for 15-20 minutes, and serve with a cup of your mom’s favorite coffee!

Simple Frittata

A frittata is perfect for Mother’s Day breakfast, as it is a lot easier to make than it looks! You can make this recipe in 40 minutes, and you likely have most of the ingredients you need in your kitchen already:

  • 8 large eggs

  • ⅓ cup heavy cream

  • ¾ cup shredded mozzarella

  • Kosher salt

  • Freshly ground black pepper

  • Pinch red pepper flakes

  • 2 tbsp. extra-virgin olive oil

  • 1 shallot, minced

  • 3 cloves garlic, minced

  • 8 oz. baby bella mushrooms, sliced

  • ½ cup ricotta

  • 3 cups baby spinach

Preheat your oven to 375 degrees, and whisk eggs, heavy cream, and mozzarella in a medium bowl. Season with salt, pepper, and red pepper flakes. In a large skillet (cast iron is best,) heat oil over medium heat. Add shallot and garlic and cook for about 5 minutes, then add mushrooms and cook for another 5 minutes. Add spinach and cook until it gets wilted, and season with salt and pepper. Pour the egg mixture into the skillet and dollop with ricotta, then transfer the skillet into the oven. Bake for about 12 minutes until the eggs are set, and enjoy!
