Healthy Recipes For Memorial Day Weekend
Memorial Day weekend is just a few days away, and to many people in the U.S, the holiday marks the unofficial first day of summer. You likely have plans to spend the day outside with friends and family soaking up some sun and firing up the grill- but instead of eating red meat and potato chips, check out these healthy and delicious recipes!
Greek Turkey Burgers
For those who are watching how much red meat they eat but still want to enjoy a burger, a turkey burger is a great option! Turkey burgers are low-calorie, carb-free, and very high protein, making them the perfect alternative to hot dogs and hamburgers. For this Greek recipe with spinach, feta, and tzatziki, you will need:
1 cup frozen chopped spinach, thawed
1 pound 93% lean ground turkey
½ cup crumbled feta cheese
½ teaspoon garlic powder
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground pepper
4 small hamburger buns, preferably whole-wheat, split
4 tablespoons tzatziki
12 slices cucumber
8 thick rings red onion
Start by draining the excess moisture from spinach, then combine with ground turkey, feta, garlic powder, oregano, salt, and pepper in a medium bowl and mix well. Form the mixture into four 4-inch patties, and wrap individually and refrigerate for up to 8 hours in advance, or grill until cooked through. When you are ready to prepare the burgers, top each with one tablespoon of tzatziki, three cucumber slices, and two rings of red onion and enjoy!
Vegan Chocolate-Covered Banana Ice Cream Bars
What’s a backyard summer party without some frozen dessert to cool you down? These vegan banana ice cream bars and covered with delicious chocolate for a healthy dessert that everyone will enjoy! For eight popsicles, you will need:
3 cups sliced bananas
⅓ cup smooth natural peanut butter
¼ cup of water
Pinch of salt
1½ cups vegan dark chocolate chips
3-ounce popsicle molds
Combine the bananas, peanut butter, water, and salt in a large food processor and pulse several times. Process until smooth, and divide into eight 3-ounce popsicle molds and freeze for at least six hours until firm.
Next, release each popsicle from the mold and place on a baking sheet with parchment paper, and return to freezer for about five minutes. Melt the chocolate chips for one minute, stir, then continue microwaving and stirring every 20 seconds until melted. Use a small spatula to spread the chocolate onto popsicles, then place back in the freezer for a few minutes until the chocolate has hardened. Garnish with your favorite toppings like chopped peanuts or shredded coconut and enjoy!
