May is National Salad Month, so it is the perfect time to try out some new recipes! Adding fresh fruit to your salad is a great way to add some a different flavor and a burst of sweetness to the greens. Continue reading for two spring salads that are full of fruits like oranges, dried cranberries, grapes, and strawberries!
Citrus Vinaigrette Spring Salad
A fruity dressing such as a citrus vinaigrette is a great way to top off any spring salad! While you can find plenty of flavors at your local grocery store, it’s just as easy to make your own vinaigrette at home. All you’ll need are the following four ingredients:
2 tablespoons apple cider vinegar
2 tablespoons fresh citrus juice (such as tangerines, oranges, or mandarins)
2 tablespoons olive oil
1-2 tablespoons honey (depending on how sweet you want the dressing)
Mix all four ingredients in a bowl, and you have a delicious vinaigrette! As for the salad, you will need:
Greens of your choice (kale, arugula, spinach, etc.)
Cheese of choice
You can make this salad your own by adding your favorite green, the citrus of your choice, and the optional ingredients of cheese, cashews, and dried cranberries. Simply add all ingredients together, top with the citrus vinaigrette and mix well, and enjoy your fresh spring salad!

Strawberry Salad and Lemon Dijon Vinaigrette
This recipe includes fresh fruit, candied nuts, feta cheese, and a citrus dressing to make a salad that contains sweet, sour, and savory flavors! The peak season for strawberries is April-June, so now is the perfect time to try this salad. You will need:
6 cups Spring Mix
1 cup Strawberries sliced
1 cup Red Grapes halved
½ cup Candied Walnuts chopped
2 Tbsp Dried Cranberries finely chopped
¼ cup Feta Cheese crumbled
And for the dressing, you will need:
¼ cup Extra Virgin Olive Oil
3 Tbsp Lemon Juice
2 tsp Honey or Agave Nectar
1 tsp Dijon Mustard
Pinch Kosher Salt
This recipe couldn’t be any easier- simply mix the salad ingredients in a large bowl, then combine the dressing ingredients in a separate bowl. Whisk or shake the dressing mixture until everything is combined, then chill in the fridge until you’re ready to eat.
