2 Must-Try Mango Recipes For Summer


The tropical mango is the perfect summer fruit, as it is sweet, refreshing, and very versatile. The fruit can, of course, be eaten on its own as a snack, but you can also add it to just about any meal, ranging from deserts to salads. Continue reading for two mango recipes you must try this summer!

Mango Chia Pudding

If you’re looking for an easy dessert to make on an especially warm summer night, this mango chia pudding is perfect! It only uses four ingredients and takes a few minutes to make, but should be left overnight to chill. You will need:

  • ½ cup chia seeds

  • 2 cups unsweetened almond milk

  • Honey to taste

  • 2 cups mango puree (about 4-6 ripe mangoes)

You can buy a mango puree from the store, or simply make your own puree with a blender or food processor then strain and sweeten to your liking. In a medium bowl, stir in the chia seeds, almond milk, and honey and let it sit for 10 minutes. Break apart any clumps and stir again, then transfer to an airtight container to let it get nice and cold overnight. When you’re ready to eat, layer with the mango puree in a serving glass or bowl and top with coconut or nuts.

Mango and Chicken Skewers

Have you ever incorporated mango into a chicken dinner? If not, this summer is the time to try! This Thai-inspired meal is a great dinner that uses mangoes, pepper, red onions, and citrus-marinated chicken. For four servings (two skewers each) you will need:

  • 1 tsp. finely grated lime peel

  • ¼ cup fresh lime juice

  • 1 Tbsp. olive oil

  • 3 cloves garlic finely chopped

  • 2 tsp. ground chili powder

  • ½ tsp. sea salt

  • ¼ tsp. ground cayenne pepper

  • 1 lb. raw chicken breast boneless, skinless, cut into 1-inch cubes

  • 2 tsp. raw honey

  • 2 mangos peeled cut into 1-inch cubes

  • 2 bell peppers cut into 1-inch cubes

  • 2 red onions cut into 1-inch cubes

Start by combining the grated lime peel, lime juice, oil, garlic, chili powder, salt, and cayenne pepper in a bowl and whisk to blend. Take the chicken and place it in a glass dish, then pour half of the marinade over the chicken and toss gently. Marinate the chicken in the fridge for as long as you prefer (20 minutes to 4 hours.) When you are ready to cook the chicken, place a piece of chicken, mango, bell pepper, then onion on a skewer in that order. Repeat twice so each has three pieces of each ingredient until you’ve made all eight skewers. With the remaining marinade you started with (not the marinade that contained chicken) stir in the honey then brush each skewer with the mixture. Grill or broil skewers for six to eight minutes, turning every two minutes, and enjoy!
