3 Watermelon Recipes That Are Perfect For Summer
Summer is watermelon season, and while the fruit makes a delicious treat on its own, it can be the star of many recipes! From appetizers to desserts, take a look at these three watermelon recipes to help you cool down this summer.
Tomato, Watermelon, And Basil Skewers
These skewers are the ideal appetizer to serve at a cookout or pool party this summer, as they are easy to make and even easier to eat! For 6-8 servings, you will need:
¼ cup balsamic vinegar
¼ cup sugar
1 watermelon, cut into 1 ½ -inch cubes (32 total)
32 small basil leaves
16 cherry tomatoes, halved
2 tablespoons extra-virgin olive oil
16 (6-inch) skewers
Add the balsamic vinegar and sugar to a small saucepan over medium heat and bring to a simmer. Stir occasionally, until the sugar is dissolved, then turn off the heat and set it aside to cool. After cutting the watermelon, push each cube to the tip of the skewer, then add a basil leaf, then tomato half, and repeat, so each skewer hold two of each ingredient. When you’ve finished with all 16 skewers, drizzle with balsamic syrup and olive oil, and sprinkle with salt.
Salsa from the jar is perfectly fine, but there’s something special about making a homemade salsa from fresh ingredients. To make your summer-ready watermelon salsa, you will need:
1 ½ teaspoons lime zest
¼ cup fresh lime juice
1 tablespoon sugar
Freshly ground pepper
3 cups seeded and finely chopped watermelon
1 cucumber, peeled, seeded and diced
1 mango, peeled and diced
1 jalapeno pepper, seeded and minced
1 small red onion, finely chopped
8 fresh basil leaves, finely chopped
½ teaspoon garlic salt
Once you have all the ingredients ready, simply stir together the lime zest, lime juice, sugar and ¾ teaspoon of pepper in a bowl. Then add the watermelon, cucumber, mango, jalapeno, red onion, and basil and toss gently. Chill the salsa until you’re ready to serve, and enjoy with your favorite chips!
Watermelon is so refreshing that it must be used in a frozen dessert! This watermelon granita is so simple, all you need is four cups of seedless watermelon chunks, ½ cup of sugar, and the juice from one lemon.
Combine the three ingredients in a food processor and puree until smooth. Pour the mixture into a shallow, wide pan and freeze for one hour. Rake the mixture with a fork and freeze for another hour, then repeat and freeze for one more hour (three hours total.) Rake and serve into cups for a fresh, cold summer treat!
