2 Healthy And Filling Lunches To Get You Through The Workday


For those who go to work every day, lunch is the most difficult meal, as you either have to purchase food or prepare something ahead of time. Many people opt for buying their lunch most days of the week, but this can get very costly, and it is often challenging to find a healthy option. Continue reading for two recipes that are healthy and filling, and are easy to prepare in advance!

Collard Wrap Bento Boxes

Collard wrap bento boxes are a great choice for those who want to make a healthy lunch quickly, as you can make four servings is as little as 20 minutes! Pair your wrap with a snack of fruit, such as grapes and berries, and a dessert of dark chocolate to help you power through the rest of your workday. 

4 Collard Wraps:

  • 4 tbsp. hummus

  • 1 medium cucumber, peeled and thinly sliced 

  • 2 medium carrots, peeled and thinly sliced 

  • 1 cup shredded purple cabbage

  • 2 avocados, pitted and sliced

  • 3 oz. shredded chicken or sautéed tofu

  • 4 large collard leaves, ribs removed

Additional for each box:

  • 1 cup mixed carrot and celery sticks

  • ½ cup grapes or berries

  • 1 oz. 70% dark chocolate

Simply spread one tablespoon of hummus on each collard leaf, then divide the veggies and chicken or tofu evenly among the leaves. Gently roll each collard leaf into a wrap, cut them in half, and you have lunch for four days of the week!

Keto Egg Salad

The Keto diet is very popular right now, and whether you are following the diet or simply love egg salad, this recipe makes a very filling lunch in 25 minutes! For four servings, you will need:

  • 3 tbsp. mayonnaise

  • 2 tsp. lemon juice

  • 1 tbsp. finely chopped chives

  • Freshly ground black pepper

  • Kosher salt

  • 6 hard-boiled eggs, peeled and chopped

  • 1 avocado, cubed

  • Lettuce, for serving

  • Optional: Cooked bacon, for serving

In a medium bowl, whisk the mayonnaise, lemon juice, and chives, season and salt and pepper, then add the eggs and avocado and toss gently. Serve with lettuce and bacon and your easy keto-friendly lunch is made!
