2 Perfect Recipes For National Picnic Month

July is National Picnic Month, as the weather is perfect for enjoying a summer afternoon in your local park or beach! An ideal picnic must include a cooler and ice packs to ensure your food and drinks stay fresh and chilled all day long. Continue reading for two recipes to bring on your next summer picnic!

Chicken Pasta Salad

Pasta salad is ideal for summer, as it is served cold with fresh vegetables and lots of protein. This chicken pasta salad is so simple to make, yet it is a very filling meal everyone will enjoy. For eight servings, you will need:

  • 1 lb. fusilli pasta

  • 2 boneless skinless chicken breasts 

  • 1 tsp. garlic powder

  • Kosher salt

  • Freshly ground black pepper

  • 1 tbsp. extra-virgin olive oil

  • 4 slices bacon, cooked and crumbled

  • 2 cups halved grape tomatoes

  • 2 cups spinach, packed

  • ½ cup crumbled feta

  • ¼ red onion, thinly sliced

  • 2 tbsp. freshly chopped dill

For the dressing:

  • ¼ cup extra-virgin olive oil

  • 3 tbsp. red wine vinegar

  • ½ tsp. Italian seasoning

  • 1 clove garlic, minced

  • 1 tbsp. Dijon mustard

  • Salt and black pepper

Start by cooking the fusilli according to package directions until al dente (there’s nothing worse than mushy pasta in your pasta salad!) then drain and put in a large bowl. Next, heat oil in a large skillet over medium heat, and season the chicken breasts with garlic powder, salt, and pepper. Cook the chicken for about eight minutes per side or until it’s cooked through, then let rest for 10 minutes before cutting into one-inch pieces. For the dressing, whisk together oil, vinegar, Italian seasoning, garlic, mustard, salt, and pepper in a medium bowl. Add the remaining ingredients to the pasta, then cover with the dressing and toss until coated. Keep it packed in Tupperware with ice packs or in a cooler until you’re ready to enjoy on your picnic!

Watermelon and Feta Salad

A watermelon and feta salad may just be the perfect salad for summer, as it is extremely refreshing and light. For those who aren’t a fan of feta, this salad also goes well with fresh mozzarella of goat cheese. For four servings, you will need: 

  • ¼ cup extra-virgin olive oil

  • 2 tbsp. red wine vinegar

  • ½ tsp. kosher salt

  • 3 cups cubed seedless watermelon

  • 1 cup cucumber, chopped

  • 1 cup crumbled feta

  • ½ cup red onion, thinly sliced

  • ½ cup coarsely chopped mint

This salad couldn’t be easier to make! In a small bowl, start by whisking together olive oil, red wine vinegar, and salt. In a large bowl, combine the watermelon, cucumber, feta, red onion, and mint. Simply mix it all together, tossing to combine, and pack it up for the perfect July picnic treat!
