How To Celebrate National Peach Month
August is National Peach Month, recognizing the sweet, juicy fruit that is abundant all summer long! Peaches play an important role in our food supply and economy, so be sure to head to your local grocery store, farmer’s market, or farm stand to stock up on the delicious fruit! Peach, Banana, and Pecan Pancakes
Peaches are often found in desserts, but why not add them to your breakfast? These peach, banana, and pecan pancakes are the perfect way to start a summer weekend or vacation!
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
¼ cup butter
½ cup sugar
2 large eggs
1 and ⅓ cups milk
½ teaspoon vanilla
1 medium banana - mashed
1 medium peach - peeled and chopped into ¼-inch pieces
⅓ cup chopped pecans
Sift together the flour, baking powder, and salt in a large bowl. In a separate bowl, cream the butter with the sugar using an electric beater, then add the eggs, milk, vanilla, and mashed banana and mix until combined. Add the wet ingredients to the bowl of dry ingredients and mix with a spatula until just combined, then fold in the peach pieces. Put a frying pan on your stove over medium heat and spray gently with cooking spray. When the pan is hot, add the batter in ¼ cup amounts and immediately sprinkle a tablespoon of chopped pecans on top. Flip the pancakes so each side is golden brown, and repeat with remaining batter. To keep all pancakes warm, place cooked pancakes on a cookie sheet in the oven at 225 degrees until you’re ready to serve!

Peach Ice Cream
What better way to celebrate the summer food holiday than with some homemade ice cream? This recipe only requires four ingredients and about 10-15 minutes of prep work. Just let the ice cream freeze for a few hours or overnight, and it’s ready to eat!
2 cups heavy cream (1 pint)
1 tablespoon vanilla
1 (14 oz) can sweetened condensed milk
3-4 large ripe peaches, peeled and roughly chopped
Chop the peaches and add them to a saucepan and turn the heat to medium. Cook the peaches for a few minutes, until they get soft, and remove them from the heat. Add heavy cream and vanilla to the bowl of a stand mixer, or use a large bowl and an electric mixer. Whip the heavy cream and vanilla for a few minutes until stiff peaks form. Next, add in the sweetened condensed milk and whisk until combined, then stir in the peaches. Spoon the mixture into a metal loaf pan and let freeze for several hours or overnight until frozen.
